HEB Meal Maker Challenge Week #4 Quick & easy meal with HEB Frozen Veggies #HEBack2School

 

We are now in Week 4, the final week of HEB’s Meal Maker Challenge! Currently I am in 2nd place and would love your daily vote to stay there! We were challenged to make a meal with 10 ingredients or less and in 45 minutes or less and the star ingredient this week…HEB Frozen Veggies. As a mom, I am always looking for ways to sneak veggies in my kiddos meals! This recipe worked great for that! They were none the wiser!

 

What you will need for this versatile recipe:

  • HEB Frozen Corn
  • 1 box of Jiffy Corn Muffin Mix
  • 1 package of hotdogs
  •  Egg Beaters (or 1 egg)
  • 1 Can of Rotel (optional)

I always try to make kid friendly meals that I can easily adapt for adults! Today’s recipe is a Corn Dog Muffin!  Pop HEB Frozen Corn in the microwave and cook as directed. In the mean time, mix Jiffy mix as instructed on the box. Once corn is done, add 1 cup to the Corn Muffin mixture. Put small amount in each muffin tin, put 1/3 hotdog in each muffin tin, then top with remaining mixture. Bake as directed, about 15 minutes. For the adult version, I added drained Rotel to the mix.

My girls love corndogs and I thought this would be a healthier way to make them. (I don’t fry much in my house!) My hubby thought that they were okay…but too much of a “kid food”  We added HEB’s Frozen Broccoli and topped with cheese as a healthy side to this meal. We only used half a bag of each…they are large portions for a family of 5 to eat in one setting.

HEB Meal Maker Challenge Week #3 Quick and easy meal with Egg Beaters #HEBack2School

We are now in Week 3 of HEB’s Meal Maker Challenge! Currently I am in 2nd place and would love your daily vote to stay there! We were challenged to make a meal with 10 ingredients or less and in 45 minutes or less and the star ingredient this week…Egg Beaters!

What you will need for this versatile recipe:

 

  • Egg Beaters
  •  2 cans of biscuits (use the smaller sized ones, instead of Grands)
  •  1 cup shredded cheese
  •  ready made microwave bacon
  • Onions
  • Bell peppers

I always try to make kid friendly meals that I can easily adapt for adults! Today’s recipe is a Biscuit, Egg, and Cheese, topped with Bacon!  Take your muffin pan, and smash the biscuits into each one (as pictured above). Pour small amount of Egg Beaters and top with cheese. For the adult version, I added chopped onion and bell pepper to the Egg Beaters. Bake 18 minutes at 300 Degrees. Pull from oven and let set for 5 minutes. (The egg will set during this time) Top them all with crumbled “ready made” bacon. I added picante sauce to the adult ones for extra flavoring!

*Please note that I tried this recipe with Grands. They were too big therefor, the biscuit not full cooking in the middle.

My family LOVED these! I will be making these again! I loved that they were easy for my kids to hold and a quick meal to make! We did not have to use forks and such…so quick clean up as well! Hubby said he would have liked ham in his…so I’ll try that next time! That boy is a MEAT eater! :)

We are now in Week 2 of HEB’s Meal Maker Challenge! Currently I am in 2nd place and would love your daily vote to stay there!  we were challenged to make a meal with 10 ingredients or less and in 45 minutes or less and the star ingredient this week…Hebrew National Franks!

What you will need for this versatile recipe:

  • Hebrew National Franks
  •  2 cans of Crescents
  •  1 can of Wolf Brand Chili
  •  1/2 cup of shredded cheese
  • Sauerkraut
  • Onions
  • Bell peppers

Lay out two crescents to resemble a rectangle, cut Hebrew National Franks down the middle length wise. Load up with your favorite toppings, pinch the sides together and bake! For my girls, I made them with Chili and cheese, for my hubby I made one with sauerkraut and one with onions and bell peppers! He LOVED it and asked that I make those again!

My kids love “Pigs in a blanket” but I thought this was a fun new take on them! I love that my kiddos were able to eat a “chili cheese dog” without the mess of chili going everywhere! I was most surprised by how EXCITED my hubby was over them! He acted like I served him steak! :)

HEB Meal Maker Challenge Week #1 Quick and easy meal with Peter Pan Peanut Butter #HEBack2School

I am so excited about HEB’s Meal Maker Challenge! Week one kicks off today and we were challenged to make a meal with 10 ingredients or less and in 45 minutes or less and the star ingredient this week…Peter Pan Peanut Butter.

What you will need for this versatile recipe:

Peter Pan Peanut Butter
Soy Sauce
Brown Sugar
Garlic Powder
Ground Ginger
Green Onions (optional)
Chicken (I used an HEB rotisserie chicken and cubed it!)
Lettuce
Noodles
Water

Start the Water for the noodles. Cube chicken into small pieces. While noodles are cooking, mix together the following ingredients in a sauce pan:
1/4 cup Peanut Butter
2 TBSP Soy Sauce
1/3 cup brown sugar
1 TBSP ginger
1/2 TSP Garlic Powder
1/3 cup water
3 chopped green onions

Mix together and heat to warm. Add chicken and serve hot over noodles for the kiddo’s and on lettuce cups for adults!

The peanut butter added flavor and made the sauce feel hearty and was a great addition of protein to this quick 10 minute meal!
