We are now in Week 4, the final week of HEB’s Meal Maker Challenge! Currently I am in 2nd place and would love your daily vote to stay there! We were challenged to make a meal with 10 ingredients or less and in 45 minutes or less and the star ingredient this week…HEB Frozen Veggies. As a mom, I am always looking for ways to sneak veggies in my kiddos meals! This recipe worked great for that! They were none the wiser!
What you will need for this versatile recipe:
- HEB Frozen Corn
- 1 box of Jiffy Corn Muffin Mix
- 1 package of hotdogs
- Egg Beaters (or 1 egg)
- 1 Can of Rotel (optional)
I always try to make kid friendly meals that I can easily adapt for adults! Today’s recipe is a Corn Dog Muffin! Pop HEB Frozen Corn in the microwave and cook as directed. In the mean time, mix Jiffy mix as instructed on the box. Once corn is done, add 1 cup to the Corn Muffin mixture. Put small amount in each muffin tin, put 1/3 hotdog in each muffin tin, then top with remaining mixture. Bake as directed, about 15 minutes. For the adult version, I added drained Rotel to the mix.
My girls love corndogs and I thought this would be a healthier way to make them. (I don’t fry much in my house!) My hubby thought that they were okay…but too much of a “kid food” We added HEB’s Frozen Broccoli and topped with cheese as a healthy side to this meal. We only used half a bag of each…they are large portions for a family of 5 to eat in one setting.
