I am so excited about HEB’s Meal Maker Challenge! Week one kicks off today and we were challenged to make a meal with 10 ingredients or less and in 45 minutes or less and the star ingredient this week…Peter Pan Peanut Butter.

What you will need for this versatile recipe:

Peter Pan Peanut Butter
Soy Sauce
Brown Sugar
Garlic Powder
Ground Ginger
Green Onions (optional)
Chicken (I used an HEB rotisserie chicken and cubed it!)
Lettuce
Noodles
Water

Start the Water for the noodles. Cube chicken into small pieces. While noodles are cooking, mix together the following ingredients in a sauce pan:
1/4 cup Peanut Butter
2 TBSP Soy Sauce
1/3 cup brown sugar
1 TBSP ginger
1/2 TSP Garlic Powder
1/3 cup water
3 chopped green onions

Mix together and heat to warm. Add chicken and serve hot over noodles for the kiddo’s and on lettuce cups for adults!

The peanut butter added flavor and made the sauce feel hearty and was a great addition of protein to this quick 10 minute meal!

Peter Pan Peanut Butter is on sale at HEB this week.  Buy Peter Pan Peanut Butter (16.3 oz.); get H-E-B Jelly (17-18 oz.) free with in-store coupons. This is a GREAT time to stock up for quick and easy school lunches or after school snacks! My kids love to eat peanut butter and apples! 🙂
