Eating together as a family is super important to me in my household. It’s a time for us to reconnect and share our “hi and low” for the day. This is where we each get to talk and be heard. I love this time because not only do I try to feed my kids emotionally, this is also the one meal a day that I “cook!” I have made it a priority to keep this as top on our important moments together time.
On busy days, or days when we have plans at night, I use my crock pot to fix up a quick meal. I love to pop in frozen chicken breast, then add cream cheese and let it look all day on low. Right before serving, I crumble ready to eat bacon on top, and add a veggie on the side.
On days when I have a little more time, I’ve been playing with different meats. I have fallen in LOVE with this brisket that HEB makes. It’s already smoked and all I have to do is warm it up. It has great flavor and I can easily toss it in my oven along with some rosemary potatoes and bake up and delicious meal with in minutes!
HEB has an awesome promo going right now and the focus is to enjoy family meals together. BTW, my favorite healthy go to meal for my family is any kind of stir fry: vegetables and protein all in one!
Quick and easy-fry onions, chopped veggies (you can buy the frozen Central Organic mixed veggies packs) and season this mix with salt and pepper. Throw in some cooked long grain or basmati rice and voila-healthy, yum veggie rice.
A lot of hamburger and/or ground turkey comes in packs of 1.2 lbs. So, when I make a recipe that calls for 1 lb. of meat, I take the other .2 lbs and make 1 or 2 small hamburgers and freeze them for another day that week. I also did this recently with salmon patties as some usually go to waste. I took 2 of them and froze them and used for another day and that way I cook less and don’t waste food.
My quick fix meal is grilled chicken veggie rolls. Dinner time is our bonding time and we always insist to enjoy together.
I love making portabella pizza’s, a little spaghetti sauce, some mozzarella and turkey pepperoni’s on top of a portabella mushroom and voila! We love to sit at the table and discuss our day!
My favorite meal is to crush pine nuts, bread crumbs, parmesan, and a little olive oil and garlic together. Separately, you mix some fresh basil and mayo. Spread that mayo mixture over the top of chicken breast. Then sprinkle the crunchy mixture over that. Bake at 350, and YUM!
