My blogging friend Merissa from Little House on the Prairie Living sent over this YUMMY Chocolate Cupcake recipe for me to share with you! I love that it’s such a simple recipe and all stuff that I have on hand already!
You can never have enough Chocolate Cupcake recipes can you? This one is sweet and simple. Easy to whip up and have baked in under an hour. You could also make it into a baking mix to make it even quicker to whip up.
- 1/3 c. cocoa
- 1 c. sugar
- 1/2 c. butter, softened
- 1 c. water
- 1 egg
- 1/2 t. vanilla
- 1 1/4 c. flour
- 1 t. baking powder
- 1/2 t. baking soda
- 1/2 t. salt
In a large bowl, mix together the cocoa, butter, sugar, vanilla, and egg. Then add in the rest of the ingredients. Drop into a muffin pan. If you prefer not to use cupcake liners make sure you grease the pan. Personally I have a small obsession with the If You Care Unbleached Cupcake Liners. Bake at 350F for 15 minutes. Reduce to 325F and bake until a toothpick comes out clean (10 – 15 minutes) I frosted these with my simple Cream Cheese Frosting recipe. Enjoy!
