I really like a good treat. Who doesn’t, right? I love being able to whip something up in the kitchen and say that I made it myself. If only I could find hundreds of recipes that could be made in less than 10 minutes, I’d be all set!
I have two little kids, a husband, a website, a family and everyone’s needs to attend to, so I don’t have a lot of time. I am not a particularly well-seasoned cook or baker, but I do like to dabble in the kitchen when I can. My favorite meals involve recipes that are super easy, but super tasty. That way my children can help!
This is one of my go-to recipes. I first read it about five years ago on a recipe site and it’s made its way through my family and friends. Now I’m giving it to you!
Easy Pumpkin Muffins
1 package yellow cake mix
1 15 oz can pumpkin puree
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan or line with paper liners.
2. In a large bowl, mix together the cake mix, pumpkin puree, cinnamon, nutmeg and cloves until smooth. Spoon equal amounts of batter into the prepared muffin cups.
3. Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted in the center of one comes out clean.
These are VERY moist because of the fresh pumpkin and tend to be sticky when you are spooning the batter into the cups. Just push it down as flat as you can before baking.
These are the perfect dessert or breakfast muffins to bake in the fall, but they’re so tasty that you can really make them any time of year. You probably already have all of the ingredients in your kitchen!
