I am a busy mom of four kiddos, that’s no secret! We are constantly on the go and I love our busy life! With the evening fun, I often find myself stressed about dinner. I am trying hard (in this new year) to do better with meal planning.
I bought an Instant Pot, that has changed my life, on Black Friday! It cooks stuff so quickly and is a huge time saver! Imagine a crock pot that cooks tender meats in a quarter of the time! It’s a pressure cooker, and so much more! I can even make yogurt in it! (I haven’t, but I want to try it!)
To date, I have made:
- Boiled Eggs (which peel SO easily!)
- BBQ Pulled Pork
- Teriyaki Pork Tenderloin
- Spaghetti (yes all in one pot at the same time!)
- Macaroni and Cheese
- Shredded Ranch Chicken
and a few other things!
Tomorrow night I am going to enjoy a much needed Girls Night out with some friends at a local restaurant! I want to make sure my family is taken care of, so I am making the following recipe for BBQ Pork Tenderloin! It’s so easy!
- 1 Pork Tenderloin (or a 2 pack from Costco works too!)
- half a bottle of your favorite BBQ sauce
- 1 cup water
I place it all in my Instant Pot and cook it on Manual for 20 minutes. It’s perfectly cooked and tender! I then quick release the pressure, and cut it on the cutting board to serve. We do this about once a week and my kids LOVE it! They think they are eating chicken, haha! They always ask for seconds and I love that it’s tender enough for my little guy to enjoy as well. (He only has 5 teeth!)
