Pumpkin Cheesecake Puff Pastry
- 1 Package of Puff Pastry Sheets
- 1/2 Can Solid Pack Pumpkin
- 1/4 Cup Sugar
- 8oz Cream Cheese, softened
- 1/2 TSP Pumpkin Pie Spice
- 1/2 Container of Cool Whip
- Mix Cream Cheese, sugar, Pumpkin Pie spice, and pumpkin until smooth. Add Cool Whip. Set aside.
- Using your favorite cookie cutter, cut puff pastry and put on parchment paper lined cookie sheet. Bake as directed on the box, let cool.
- Pull apart the puff pasty and put in 1 TSP of Pumpkin Cheese filling, top of puff pastry and a dollop of whipped cream.
